No Sugar Added

1 cup mashed banana

2 egg whites or 1 extra large egg

1/2 cup water

1/3 cup vegetable oil

2 cups of all-purpose flour

1 teaspoon baking soda

2-1/4 teaspoons baking powder

1 cup fresh or frozen blueberries

1. Preheat oven to 350 degrees. Prepare 18 standard-sized muffin cups with paper liners.

2. In a large bowl, stir together banana, egg, water, and oil. Add flour and mix. Stir in baking soda and baking powder quickly, and then mix completely.

3. Bake about 20 minutes, or until cake tester inserted in the center of one muffin comes out clean.
