Bananas in Coconut Milk

Not a Healthy Option - but so good

I used to go to a restaurant that sold this. It was the best thing on the menu - but it was a bit out of the way. So one day I spent a whole morning trying to get the recipe right. It didn't take a whole morning, but once I got it right I kept making it until I was fit to burst.

For it you will need:

a banana

half can of coconut milk

a couple of tablespoons of butter

a couple of tablespoons of brown sugar

How to do it:

Okay then, you need to do a tiny bit of prep - so before you get going open your can of coconut milk and chop your banana - you won't have time once you get going.

A wok is great for this. A frying pan will do too, the shape of the wok keeps everything in the middle.

Right then, melt your butter over a medium heat and add in your banana - fry the banana for about 30 seconds and add your sugar - stir around till the sugar dissolves into a smooth looking caramel.

Add your coconut milk and stir it all together - until you get a nice looking sauce.

You have to serve this immediately - I like to pour this into a bowl - put a waffle cone in the middle and fill the cone with a pint of Haagen Daaz!!!

This recuipe explains why I can't fit into most of the clothes in my wardrobe!
