I've been to all three places and they truly have some of the best barbecue in the world. Memphis and Ribs just simply go together.
Here's a interesting fact for you. Half of all marshmallows consumed in the USA each year are roasted. Many over the open fire. Just wanted to throw that in there. And I know the kids at your next Barbecue would just love some roasted marshmallows.

Beef Brisket is oh so good if done right but you have to do it right or you will end up with something that tastes like a football or a old shoe. But guess what if you follow my recipe for beef brisket you will have the best tasting beef brisket you will ever eat.
One very important thing with a beef brisket is you have to cook it over a very slow fire so it will turn out tender, juicy, and delicious. So start your charcoal well ahead and it wouldn't hurt to have some hot charcoal on the side in a tin can in case you need to add more. You want to cook your beef brisket over a slow charcoal fire.
Prepare your beef brisket by placing it into a large enough container so that when you pour Italian dressing over it you can cover the brisket completely. It will take about 4 large bottles of Italian dressing to cover the average brisket. Once you have your brisket in the container and covered with the Italian dressing place it in the refrigerator over night.
Make the below BBQ Sauce recipe and set it aside in the refrigerator until you need it.
You will need for your BBQ Sauce.
1 Gallon Of Ketchup
1 Cup Of Light Brown Sugar
1 Cup Of Worcestershire Sauce
1 Cup Of Lime Juice
1 Tablespoon Paprika
1 Tablespoon Of Fine Ground Cayenne Pepper
1 Tablespoon Salt
1 Tablespoon Black Pepper
Place all your BBQ Sauce ingredients in a large pot and gradually increase the heat until you have it almost at a boil. Reduce heat to a low simmer and cook for one hour. Remove from heat let cool and refrigerate.
On the second day after the brisket has been soaking in the Italian dressing over night remove it from the marinade and place it directly onto a hot grill. Before you place the brisket onto the grill be sure your charcoal is producing low heat but still burning. You want to use a grill you can close up. Once you place the brisket on the grill paint it with the BBQ sauce. Cook it gradually over the next few hours until you get a internal temperature in the brisket with a meat thermometer of 160 degrees. Once it reaches 160 degrees remove from the heat and let it stand one hour before you slice it. All the time your brisket is cooking you want to turn it over once in a while and baste it with the BBQ Sauce. You will end up with a brisket that will be fit for Kings.
