Sea Bass with Vegetables
I am answering a request from a fellow Hubber for a baked fish recipe, but I am giving you two because they are just awesome. Even those who don't eat fish may become converts.
Pre-heat oven to 400 degrees F
Ingredients
2 1/2 to 3lbs. dressed Bass (whole fish)
1 green bell pepper (chopped small)
8 mushrooms (chopped small)
1 yellow onion (chopped small)
1 cup celery (chopped small)
1/3 cup butter or margarine1 large can chopped tomatoes
salt
pepper
Season fish inside and out with salt and pepper. Set fish aside and begin to simmer all the chopped vegetables together in the butter or margarine. Continue to stir this mixture together for about 8 to 10 munutes. Next add your tomatoes to the vegetables; add a pinch of salt and pepper. Cook over a medium to high heat until ingredients start to boil. Turn off stove. Place your fish in a baking dish that is 12 x 8 x 2 or larger. Pour tomato and vegetables on top. Bake and baste fish occasionally for about 30 minutes or longer until fish is easily flaked when forked, yet still moist.

Foil Baked Sole
Recipe for Baked Filet of Sole
Ingredients (Pre-heat oven to 350 degrees)
fresh parsely
fresh thyme
paprika (can)
6 pieces Filet of Sole dipped in butter
1/3 lb. crab meat
1/3 lb. small shrimp

Begin by chopping the parsley and thyme to very fine. Next cut 6 pieces of aluminum foil into about 12 x 12 inch pieces and add one piece of fish to each. Salt and pepper each piece of fish and evenly distribute the crab, shrimp, mushrooms, parsely and thyme on top of each piece of fish. Again add a dash of salt and pepper on top. To top off this magnificent baked fish, add 1 tbls. of sour cream to each prepared fish and drizzle about 1 tbls. of vermouth and top it all off wiht a sprinkle of paprika. Close foil, leaving a airway to vent steam. Place on a cookie sheet and bake at 350 degrees F for 35 minutes.
