My mom is the world's best cook. I know everyone says that, but mine really is. Each year on New Year's Day, she makes a roomful of waffles and we eat them with every imaginable topping. Whip cream, maple syrup, fruit syrup, butter, strawberries, blueberries, etc, etc. You get the picture. I am sure by now your mouth is watering.
My mom would always invite lots of people over for New Year's. Every single one of them would comment on these waffles. "They taste like donuts." or, "Can I get this recipe?" or, "Are those hard to make because they are delicious?"
Well, here is the truth, they do taste like some kind of delicious pastry. You can get the recipe. And, they are incredibly simple to make. Read on and I will tell you how.

How to make these delectable delights.
First, gather the following ingredients:
- 1 pkg dry yeast (2 1/4 tsp)
- 2 Cups lukewarm milk
- 4 eggs, separated
- 1 tsp vanilla
- 2 1/2 cups sifted flour (I actually never sift, I just use it right out of the bag--but don't tell my mom--she would be horrified.)
- 1/2 tsp salt
- 1 TB sugar
- 1/2 cup melted butter
Now, use a very large bowl. Not kidding here, these rise like crazy, use the biggest bowl you have. Sprinkle the yeast over the warm milk and stir. Beat the yolks only and add them to the yeast mixture. Add the vanilla to the mixture. In a separate bowl, mix the flour, salt and sugar. Add these to the liquid mix you have in the other bowl (the really big one). Stir in the melted butter. In a separate bowl (I use the empty dry ingredient bowl from the previous step) beat the egg whites until they are stiff. Fold these into the batter (if you don't know what this means--just take the stiff egg whites and use a spatula and softly, gently push them into the other mixture. Pretend that you are folding the mixture over and over about five times. Easy, huh?) Let this big bowl of mixture stand in a warm place until it doubles (normally about 45 minutes or more). Now, scoop the mixture into your favorite belgian waffle cooker and cook them up. Don't cry when you eat them. I know you will want to because they are so delicious they will bring tears of joy, but refrain. It will scare the kids if you cry. Enjoy with your favorite toppings.

Gypsy Willow, no joke, with these they never stick. You just give the pan a light spry of Pam and voila, perfect waffles. I have never once had them stick. In fact, for about five years I used my Grandma Nan's really old waffle iron that I inherited from her when she passed on. This waffle iron was about 35 years old and never once did my waffles stick.
