I use to make pancakes every Sunday when all the older kids were at home. I remember the smell of fresh pancakes with maple or butter syrup drifting through the house while Sunday morning chatter went on in the background.
I loved to cook in my beautiful kitchen. My black stove had a rock backsplash that matched the hearth around my fireplace, with it's 13 foot seating area all the way across the livingroom it was so perfect on those cold winter mornings. This recipe is not just a recipe it's a memory of sweet cherished family time, long since passed. Most all the kids are now moved out and starting families of their own. Food has always been a big part of my time with my family, there are so many comforting memories wrapped up in those recipes everyone loves and longs for. For my family this pancake recipe is one of them.
Homemade Pancakes
Wet:
2 eggs
2 cups milk
4 TBS oil
Dry: 2 1/2 cups self rise flour
6 TBS sugar
1/2 tsp salt
Mix well, add a very small amount of water if batter
thickens too much.
Pour onto hot greased frying pan or griddle pan. Cook
until bubbles in the middle of the pancake begin
to pop and sides of cake look slightly dry - flip and
cook the other side approximately 2-3 minutes. You may
substitute dry powdered milk for fresh milk. To do this
add 1/3 cup powdered milk to the dry mix. When making
pancakes, simply add 1 more cup of water.
You can add chocolate chips, cooked apple chunks or blue berries to your batter to make delicious pancakes. Serve with your favorite syrup, peanut butter or any kind of jam you love.

See results without votingI don't know about you but we like breakfast for supper some times. I love to make pancakes, sausage, eggs and hash browns yummy. Well some people call it dinner but I was raised that lunch was called dinner so supper was our evening meal. Everyone likes a little breakfast in the evening some times it just sounds good some days or nights okay now I am really getting things goofed up hey? l really hope you enjoy this recipe as much as we have over the years.
The best thing about this recipe they even taste great cold with jam or jelly on them later too. I make extra just so everyone can snack on a few later if they wish. I love apple butter, Jalapeno jelly, and Orange Marmalade that is the good stuff right there.
