Macaroni Salad- A Requirement for Any Respectable Summer Gathering

When outdoor grilling, summer holidays, picnics, and family reunions come to mind, so does macaroni salad. Macaroni salad is a food staple on outdoor dining menus. And no wonder- macaroni salad is delicious, easy to make, and easy to transport. Macaroni salad is also inexpensive.

Macaroni salad isn't limited to just the summer months. Macaroni salad is also a popular recipe for Thanksgiving, Christmas, and Easter.

World's Best Classic Macaroni Salad Recipe

2 1/4 cups uncooked elbow macaroni

4 hard-cooked eggs, diced

1/2 cup diced onion or green onion

2 diced celery stalks

2 tablespoons dill pickle relish

2 cups salad dressing, not mayonnaise

3 tablespoons yellow mustard

1/4 cup sugar

2 teaspoons vinegar

1 teaspoon celery salt

Dash paprika, sprinkled on top for presentation

Add macaroni to a pot of boiling water. Cook the macaroni according to package directions, or til tender. Drain and let cool.

While the macaroni is cooking, mix the next 4 ingredients together in a large bowl. Mix together the salad dressing, mustard, sugar, vinegar, and celery salt in a separate bowl. Mix the contents of the two bowls together. Add the macaroni and stir gently until well blended.

Cover the macaroni salad and refrigerate overnight to marry the flavors and so that the macaroni will absorb the dressing. Sprinkle paprika on top of the macaroni salad just before serving.

Makes 8 servings

Addition suggestions- Cubed ham, cubed cheddar cheese, chopped tomatoes, chopped red or green peppers or both (using both red and green peppers makes a great presentation dish for Christmas), green peas, dash of hot sauce or garlic powder
