My favorite place to stay in Vegas is the Gold Spike. It's a terrible downtown hotel, but you can get a room for less than $50 on the weekend. Of course, I'm just looking for a bed to sleep in and not much else. This site is a good guide to vegas hotels, and deals:

Binion's the hotel isn't all that great anymore, but the Steakhouse has an excellent view and good food at a reasonable price (by Vegas standards anyway).
