Meat Eater Turned Vegetarian?

HARDLY!  I love meat.  But this past week, some extended family came into town, one of which is a vegetarian.  As I scrambled my brain trying to find something to make for dinner that we could all enjoy, I decided that a mexican type meal would be good, specifically tacos.  That way everyone could put on them what they wanted, and I could also appeal to the vegetarian in the family.

Little did I know that I may now life Black Bean Tacos better than meat tacos.  After prepping everything from Pico de Gallo, Guacamole, and cooking up the ground beef, I also opened a can of black beans. 

I decided to use both the meat and the black beans in my own taco to make the meat go farther.  Boy was I in for a surprise.  I actually like the black beans better than the meat!

So I made one without the meat and it was so tasty that I didn't bother with the meat for the rest of them.  In fact, the next morning, I made an omlette with black beans, and topped it with the remaining Pico and some Cilantro and ate that with chips and it was heavenly.

So for those of you who are looking to add some awesome flavors to your tacos, I highly recommend adding black beans. 

Use them in place of ground beef, add some fresh salsa, cheese and cilantro and you have a really tasty mexican meal without the meat or the extra fat.

Black Bean Tacos

Taco Shells

Black Beans - canned

Pico de Gallo - Fresh tomato, green onion, jalapeno, cilantro, and lime juice

Avocado or Guacamole

Shredded or Jack Cheese

Lettuce if desired

Warm the canned beans in a pot on stove and lightly warm the taco shells in the oven.  Fill the taco shells with the beans, and other toppings and enjoy.  YUM!
