While many people love pecan pies, especially around the holiday season where they have acheived the status of a traditional holiday dessert, they don't make pecan pies from scratch because they think they are too complicated or difficult to make.

Here is an easy recipe for a tasty pecan pie made by using a blender to mix all the ingredients.

2/3 cup sugar

1/2 cup light corn syrup

2 tablespoons butter, melted

1 teaspoon vanilla extract

1/2 teaspoon salt

2 eggs

1 cup pecan halves

1 unbaked 9-inch pastry shell

  1. Preheat the oven to 400°F.

  2. Combine the sugar, corn syrup, butter, vanilla, salt, and eggs in the container of an electric blender; process until smooth, stopping once to scrape down the sides.

  3. Add the pecans to the blender; pulse 1 or 2 times or until the pecans are coarsely chopped.

  4. Pour the mixture into the pastry shell.

  5. Bake 15 minutes.

  6. Reduce the oven temperature to 325°F; bake 35 minutes or until set, shielding the edges with aluminum foil to prevent excessive browning, if necessary.

  7. Cool on a wire rack.
