Brazo de Mercedes is a popular snack or merienda dessert in the Philippines. It is a rolled cake made of egg whites with egg yolks as the rich custard filling. Easy to prepare and cook. Filipinos love it.
Ingredients
- 8 eggs, separate egg white from yolk
- 1 lb. sweetened condensed milk
- 1 tsp. cream of tartar
- 1 cup sugar
- 2 Tbs. butter
- 1 tsp. vanilla extract
- parchment paper
Cooking Instructions
Preheat oven to 400°F. Combine egg yolks and condensed milk in the top of a double boiler. Cook and stir frequently until thickened, about 10 minutes. Add butter and mix thoroughly. Set aside. Beat egg whites and cream of tartar to soft peaks. Add sugar gradually. Stir in vanilla. Line a cookie sheet with parchment paper and butter. Spread meringue over paper and bake 10-15 minutes until brown. Remove from oven and loosen parchment paper. While still hot, spread filling evenly over top. Roll up like jelly roll. Chill. Slice and serve.
