59French Toast Breakfast Baskets
I could sleep last night, so I lay in bed trying to think of something different to cook for breakfast for the kids in the morning. This is what I came up with, and they loved it and so did I.
French Toast
8 pieces white sandwich bread, or however many baskets you want to make
Mix 2 eggs, teaspoon cinnamon, 1/2 teaspoon vanilla extract, and a dash of milk in a bowl. Dip slices of bread in mixture, and mix more as needed to coat all your bread. Spray muffin pans with A LOT of nonstick cooking spray. Push slices of dipped bread in muffin pans trying to shape them in to a bowl or basket shape, (where you can place stuff in the center.) Bake in your oven on 400 degrees until a little toasting and egg coating is cooked.
While these are cooking scramble some eggs and fry some bacon.
Remove french toast baskets from muffin pan. I had a little difficulty getting them out but you can use a butter knife to move around the edges if they are a little stuck.
Place each basket on a cute saucer, insert scrambled eggs on the inside of the basket and place a slice of bacon across the top to resemble a basket handle. Dust with a bit of powdered sugar and add a couple of drizzles of maple syrup. Now you have a very cute, creative, and yummy breakfast your kids are going to love!!!
