Breakfast Burrito Recipe

I had some leftover salsa that I had made and decide that I would like to spice up my breakfast. So I just added a few ingredients to a salsa and cheesy egg recipe and voila!! Breakfast burritos.

This recipe is great, when you have leftover breakfast food.

What you Need:

  • Salsa - from - CLICK HERE!! - any will work
  • Scrambled Eggs and Cheese - - from - CLICK HERE!!
  • 4 Tortillas - the medium ones
  • 1 Jalapeno Pepper - seeded and diced - substitute some green bell pepper for mild.
  • Diced Onion if you like - about 1/4 of a medium yellow or 4 green onions
  • Sausage - a couple of patties should do - leftover or fresh
  • 1 Tablespoon of Extra Virgin Olive Oil

Cooking It:

  • Cook sausage and crumble
  • Saute jalapeno and onions in non-stick skillet with Olive Oil until tender
  • Scrambled Eggs and Cheese - see this recipe.
  • Warm tortillas in oven or microwave

Wrapping it Up:

  • Mix eggs, sausage, pepper and onions together
  • Add 1/4 of the mixture to a tortilla shell
  • Add salsa - if you like
  • Wrap tortilla shell
  • Repeat until you run out of mixture - should make about 4 burritos

My dad always adds sausage to breakfast burritos. They're one of my favorite breakfast items. I'd love to read Hubs about your time in the Navy and more!
