Caribbean Fish Cakes

Here's how to make Caribbean Fish Cakes

Ingredients:

340g/12oz/1 1/2 cup steamed or left - over fish, cod or smoked fish

225g/8ozs/1 cup of mashed potato or provision

1/2-teaspoon limejuice

1-tablespoon parsley

Breadcrumbs and flour

1-tablespoon onion

chopped 1 egg

Salt and Pepper to taste Oil for frying


Cooking Instructions:

  1. Flake and mash the fish.
  2. Add the potato, seasoning and lime juice.
  3. Beat egg and put half of it in the mixture. Shape the mixture into cakes with a spoon. Dip the cakes in the rest of the egg. Roll in breadcrumbs and flour, and fry in deep or shallow fat.

Serving Suggestions:

These Caribbean Fish cakes taste great with a little chilli sauce.

You can also serve them with spicy chip boats, which are a little healthier than chips.
