Carrot Cake

Ingredients

  • 2 Cups Sugar
  • 1 1/2 Cup Vegetable oil
  • 2 Cups Flour
  • 3 Cups Carrot (grated)
  • 1 Cup Walnuts (chopped)
  • 2 tsp. Baking soda
  • 2 tsp. Cinnamon
  • 1 tsp. Salt
  • 4 Eggs
  1. Blend together sugar,oil, and eggs
  2. Slowly add dry ingredients
  3. Add carrots and 3/4 of the walnuts
  4. Bake at 350 degrees for 45 minutes
  5. Let cool

Frosting:

  • 1 8oz. pkg. cream cheese
  • 12 oz powdered sugar
  • Remaining walnuts
  • 1 stick butter
  • 1 tsp. vanilla
  1. Blend together
  2. Spread all over the cake
  3. Serve
