Cauliflower Salad: A Unique Dish to Bring to Your Next Summer Cookout (low-fat)

Although similar in taste, texture and appearance, salad dressing is usually a bit sweeter than mayonnaise.
Cauliflower Salad is easy prepare - no cooking required! Just assemble, chill, mix and serve!
I love to bring this dish to summer cookouts. It's a great alternative to macaroni or potato salad and it's always a hit! In fact, a friend once remarked, "Wow! I didn't know you could make cauliflower taste good!"
Ingredients:
- 1 large bunch of Romaine, torn into bite size pieces
- 1 head of cauliflower, cut into florets
- 6 slices of turkey bacon, crisply cooked and crumbled
- 1/2 cup chopped red onion
- 1/4 cup sugar
- 2 cups lowfat mayonnaise or salad dressing
- 1/2 cup fresh Parmesan cheese, grated
- Place Romaine in large glass bowl. Layer cauliflower florets, bacon, then red onion.
- In a separate bowl, combine remaining ingredients. Spread mixture over onion layer, covering completely and sealing to the edge of the bowl.
- Cover the bowl tightly with saran wrap and refrigerate for 24 hours.
- Toss before serving.
