Charred Rice with Cabbage and Ground Chicken

Who'd Have Thought It?

 On the candida diet you may get tired of RICE!!  This is rice in a new way.  It is cooked in a skillet with oil, sunflower nuts, garlic, chicken broth and salt and pepper.  It is served with diced fried cabbage and ground chicken.  The variance in flavors and textures makes this dish totally unique!!

Ingredients:

  • Olive oil or coconut oil
  • Sunflower nuts
  • 1-2 cloves garlic
  • 1/2 cup brown rice
  • salt and pepper
  • cabbage
  • chicken broth
  • lemon pepper salt
  • ground chicken or chicken meatballs

Directions:

  1. In a skillet heat cocount oil or olive oil over medium heat.
  2. Add a small handful of sunflower nuts to begin toasting.
  3. Cut garlic into small pieces and add to pan.
  4. Pour rice into skillet to brown.
  5. Leave to brown for a few minutes.
  6. Add enough chicken broth to cover the rice.
  7. Stir for 30 seconds.
  8. Cover and let sit.
  9. Repeat for about 20 minutes, adding liquid.  After about 20 minutes, allow the liquid to be absorbed.
  10. Go HERE for the cabbage recipe.  The variance for this recipe is that the cabbage will be diced instead of julliened.
  11. For chicken, either cook the ground chicken and add a small amount to your dish OR use frozen and thawed chicken meatballs cut into very small pieces.
