Ingredients for Italian Frittata

Saute Together:

Pancetta: 1/4 lb chopped

Olive Oil: 1 tbsp for cooking

Onion: 1/4 chopped

Garlic: large clove minced.

 

In a mixing bowl:

Egg Beaters: 2 small boxes (1 qt)

Salt and Pepper to taste

Red Chili: a pinch

Basil: 5-6 leaves chopped

Shredded Mozzarella: 1/2 cup

Shredded Parmesan: Sprinkle on top

Ingredients and spicing can be modified to your taste. The basic principle of Frittata creating allows for an amazing variety of recipes, including many not included here. I have included Cheri's recipes because we love them. We hope to share more with the public as time goes on. Since she doesn't have time to share these I just could not let her great recipes remain in obscurity.

Instructions for Preparing Italian Frittata

Saute pancetta until crispy. Add onions. Cook 5-10 minutes. Add garlic,saute for one minute. Pour contents into 9x13 baking dish.

Pour egg mixture over meat mixture. Top with parmesan cheese. Bake at 350 for 40-50 minutes until the frittata rises.

Let cool for 10 minutes, so it won't fall. Cut into squares.

These instructions will work nicely with the Frittatas that follow.

My daughter Cheri's Fritatta's

My daughter Cheri has learned to cook in a gourmet style but with quick and easy recipes. She has many ways of making many of her dishes. Her Frittatas can be made in many different themes and in variations of those themes. I will share her expertise with you in a simple and easy way. Frittatas make a great breakfast favorite that is light and good for you.

Frittatas possibly were being made before the creation of omelettes and require less attention while baking. Frittatas are great if you really want to serve everybody at the same time. You have to employ a lot of burners to prepare many omelettes at the same time.

Originally, Cheri started making Italian Frittatas but then branched out to Denver Omelette frittatas, Mexican frittatas using soy chorizo and Spanish frittatas. These recipes are using egg beaters but you can substitute 12 large eggs or a combination of both.

Traditional frittatas are cooked on the stove then set in the oven while still in the pan. Cheri prefers to put these in a baking pan in order to serve 8-10 people. The recipes below will serve that many.

As a diabetic I really enjoy this recipe because I can eat quiet a bit without problems with sugar level increases. I hope you enjoy my daughter Cheri's culinary accomplishments!

Denver Omelette Frittata

Denver Omelette Frittata substitutes ham for the pancetta 

Onion: 1/2 chopped

Garlic: clove minced

Bell Pepper: chopped green

No Basil

Top with Cheddar Cheese

Egg Mixture:

Cheddar Cheese: 1/2 cup

Mrs Dash Original

Salt and Pepper


Spanish Frittata

Potatoes: (no meat) 2 peeled and sliced thin

Jarred Roasted Red Bell Pepper: 1/4 cup chopped

Olive Oil: 2-3 tbsp

Onion: 1/2 yellow chopped

Garlic: 2 cloves minced

Monterey Jack Cheese: 1/2 cup

Cilantro: 1/2 cup chopped

Sprinkle more Monterey Jack on top

Optional Toppings:

Sliced Avocado

Light Sour Cream

Sliced Olives

Sliced Green Onions

Soy Chorizo Mexican Frittata

Soy Chorizo: 1/2 pkg

Potato: 1 peeled and cubed (saute until soft with soyrizo)

Bell Pepper: chopped red

Egg mixture:

Chile Pepper: pinch

Mexican Cheese: 1/2 cup

Cilantro: 1/2 cup chopped

Optional Toppings:

Light Sour Cream

Salsa

Sliced Avocado

Sliced Green Onons

Sliced Olives

Chopped Cilantro

Wow, these sound really good. Do you think your daughter would mind if I used them in my bed and breakfast? I like recipes that you have to bake, They are not so work intensive and you can do other things while they're baking. Thanks.
