Jalapeno Hushpuppies

Jalapeno Hushpuppies Recipe

These Jalapeno Hush-puppies are delicious with your chicken and potato soup especially if you choose to add the shrimp to your soup.

For Your Recipe You Will Need

1. 1 Cup yellow Corn Meal.

2. 1/2 Cup Flour.

3. 1 Onion Minced Very Fine.

4. 4 Jalapeno Peppers with seeds removed and chopped fine.

5. 1 Teaspoon Fresh Minced Garlic.

6. 1 Large Egg.

7. 1/2 Cup of Milk.

8. 1 Teaspoon Baking Powder.

9. 1 Teaspoon Brown Sugar.

Mix all of your ingredients together well in a large mixing bowl and let set covered at room temperature for 1 hour before you fry your hush-puppies by the spoonful in a 350 degree home deep fryer.

be sure to drain your hush-puppies on paper towels before you serve them. These hush-puppies have a little tex mex fire but not to much. They are quite addictive though I will warn you.

Chicken And Potato Soup

Here is a delightfully delicious chicken and potato soup that is both unusual and festive but also delicious. You can serve this soup with Mexican corn bread and a green salad for a delicious meal.

You Will Need For Your Recipe.

1. 8 Chicken Thighs and 8 Chicken Legs.( Brown on both sides in oven before adding to soup )

2. 2 Pound White Potatoes In Large Cubes.

3. 2 Pound Sweet Potatoes In Large Cubes.

4. 1 Large Purple Sweet Onion Diced.

5. 1 Pound Whole Baby Carrots.

6. 12 Small Ears Corn On The Cob.

7. 1 Teaspoon Salt.

8. 1 Teaspoon Cumin.

9. 1 Teaspoon Ground Cayenne Pepper.

10. 1 Teaspoon Coriander Seeds.

11. 1 Teaspoon Black Pepper.

12. 1 Teaspoon Hungarian Paprika.

13. 1 Teaspoon GroundĀ  ChipotleĀ  Chili Pepper.

14. Chicken Broth to cover all your ingredients.

Place all your ingredients in a large stock pot. Be sure that you brown your chicken pieces in your oven on both sides before you place into the soup. Heat to boiling and then reduce to medium heat cooking until your chicken is done and ready to fall off the bone. You can now fish your chicken out and set aside to add to each bowl of soup as you serve it. If the liquid in your soup gets low add more chicken broth not water. This is really a Tex-Mex version of Frogmore Stew. And everyone I have ever prepared it for has loved it. Some people like to add a pound or two of large peeled and de-veined shrimp to this soup in the last 45 minutes of cooking time. This is optional but it does add a whole new dimension to the soup and really makes it a full meal.

You will want the fresh corn cut from a ear of corn and chopped tarragon leafs to garnish the soup in each bowl.



Mexican Corn Bread Recipe

I just simply love Mexican Corn Bread and here is a delightfully delicious recipe for Mexican Corn Bread that everyone loves.

For Your Recipe You Will Need.

1. 2 Large Eggs Well Beaten.

2. 1/4 Cup Of Vegetable Oil.

3. 1 Cup Of Butter Milk.

4. 2 Cups Shredded 4 Cheese Mexican Cheese.

5. 1 large Sweet Purple Onion Minced Fine.

6. 1 Can Cream Style Corn.

7. 1 Cup Self Rising Cornmeal.

8. 1 Cup Self Rising Flour.

Pre-heat your oven to 350 degrees and spray a 8"X8" baking pan with vegetable cooking spray. Pour your Mexican Corn Bread batter into the pan and bake until the top is golden brown and a toothpick inserted in the center comes out clean.
