Chocolate Fudge

Introduction

As the holiday season approaches, there are many ways to celebrate and relieve stress from shopping, cooking, etc. . . One of the best ways is to make a batch of fudge. I prefer chocolate fudge over peanut butter, but I know many have different tastes and wants or needs. This recipe is one of my favorites and I would have a batch of this at home constantly if possible.  

One Pound of Fudge


Ingredients

  1. 3 Cups of sugar
  2. 2/3rd cup of cocoa
  3. 1/8 tsp. salt
  4. 12 ounces of evaporated milk
  5. 1/2 stick of marg or butter
  6. 1 tsp. of vanilla
  7. appr. 12 ounces of peanut butter (Add more if you like more PB taste)  

Directions

Combine all dry ingredients add to cream and mix thoroughly. Turn heat on to med high heat stirring constantly. Reduce heat once it starts to boil. Boil stirring occasionally until it reaches 232 degrees or when it forms a soft ball in ice water.

Remove from heat add margarine (butter) then vanilla and peanut butter stirring briskly until it loses it's gloss (it is possible to use a hand held mixer for stirring in this step). Scoop onto a buttered large plate or 10 x 13 inch pan. Let set 

Final Thoughts

I hope this recipe is one you will enjoy throughout the Holiday season. To me there is nothing like grabbing a big chunk of homemade fudge after working or shopping all day long.

You can substitute sugar with any sweetener you desire, but I don't know why anyone would want to do that. :P

Actually I do know why. Diabetics shouldn't eat much sugar at all. Replacing the sugar with a different sweetener is much better for them.

I was requested to make Peanut Butter and Chocolate fudge for Thanksgiving by my daughter. I also make several different kinds of fudge as Christmas gifts. I did this last year and the year before I made cookies.

That's my problem--if I make fudge in my house I will eat it til it is gone---no moderation there! My way of avoiding the "temptation" is to not have it at all!!

Hey I just thought of a tip.  Before you put the butter in the mixture and before you take the wrapper off of it rub it around the pan you plan to put the fudge in first with it.

Well the first batch was too dry because I was making it and then my daughter caled and I cooked it down to long. the second batch was delicious--well we are still eating it! Thank You for posting this!!

i believe i did everything right, except i wasn't able to make sure the temp was 232, but it did form a soft ball in ice water, but it had not hardened yet and it's been 14 hours. Any ideas?

Momof3, The only trhing I know to say is that it either didn't cook long enough, of you didn't stir it long enough. When you fix the fudge, if you notice it is very glossy when you first start stirrin in the peanut butter. All of the gloss should be gone before you atop stirring it. It will look very dull.

I hope this helps. I wouldn't cook it longer until I tried to stir it longer first. I know when I stir the peanut butter in my arm feels very heavy by the time I am finsihed stirring.
