Chocolate No Bake Cookies and other Chocolate Delights

When you don't want to turn your oven on.......

2 cups sugar

4 Tablespoons cocoa

1/2 cup milk

1/2 cup peanut butter

1 stick butter or margarine

1 1/2 cups old-fashioned oatmeal

1 teaspoon vanilla

Mix sugar, cocoa and milk in saucepan. Boil 1 minute. Add remaining ingredients. Drop by teaspoon on waxed paper and cool. Makes 2 dozen.

Variations: Omit cocoa. Use 2 cups light brown sugar and 1/2 cup coconut.

Omit peanut butter. Add 1/2 cup finely chopped nuts.

When you can't go camping..........

Make some of these no-bake cookies.

INDOOR S'MORES (Came off the box of Golden Grahams cereal)

2/3 cup light corn syrup

2 Tablespoons butter or margarine

1-11 1/2 ounce milk chocolate chips (it may be 10 ounce by now)

1 teaspoon vanilla

1 10 ounce box Golden Grahams cereal (about 8 cups)

3 cups miniature marshmallows

Butter baking pan, 13 X 9 X 2 inches. Heat corn syrup, butter and chocolate chips to boiling in 3 quart saucepan, stirring constantly. Remove from heat. Stir in vanilla. Pour over cereal in large mixing bowl. Toss quickly until completely coated with chocolate. Fold in marshmallows, one cup at a time. Press mixture evenly in pan with buttered back of spoon. Let stand until firm, at least 1 hour. Cut into about 1 1/2 inch squares. Makes 48 squares.

When you don't mind if your oven is on for 20 minutes...

Try this Texas Sheet Cake

1 cup (2 sticks) margarine

1 cup water

1/4 cup cocoa

2 cups sugar

2 cups flour

1/2 teaspoon salt

2 eggs

1 teaspoon baking soda

1/2 cup sour cream

1 teaspoon vanilla

Frosting, recipe follows

Chopped pecans

Combine margarine, water and cocoa in saucepan over medium heat;heat until margarine melts. Add sugar, flour, salt, eggs, soda, sour cream and vanilla and mix well. Pour into 15 X 10 inch cookie sheet with sides. Bake at 350 degrees, 20 minutes. Spread frosting on cake while cake is hot. Sprinkle nuts on top of cake.

FROSTING

1/2 cup (1 stick) margarine

1/4 cup cocoa

1/4 cup plus 2 Tablespoons milk

1 box (1 lb.) confectioner's sugar

1/2 teaspoon vanilla

Combine margarine, cocoa and milk and bring to a boil. Add remaining ingredients and mix well with electric mixer.

only problem with me visiting these delcious recipes Judydianne! is that I leave here with hunger pangs:-/...Keep em coming though I love the simplicity of your recipes.

Archigirl, I hate having the oven on in the Summer, so I try to use my griddle instead of my broiler, my bread machine instead of the oven, and sometimes the crock pot or the microwave. Thanks for the comment!
