This chunky sauce is warm, hearty, and full of vitamin C!

Serves Four

Approximately 130 calories per serving.

This sauce is so chunky, you can fill your plate up with more sauce than pasta for a fulfilling meal.

• 1 tsp olive oil
• 3 cloves garlic, crushed or sliced
• 1 onion
• 3 bell peppers (red, orange, yellow), coarsely chopped
• 1/4 cup sliced mushrooms
• 12 oz. prepared tomato sauce
• 1 fl. oz white wine
• 2 tbsp grated Parmesan cheese

Heat oil in pan over medium heat.

Add onion and garlic, saute' for a few minutes until onion is translucent.

Add bell peppers.

Cook for another 4 minutes or so, until peppers start to look tender.

Add mushrooms and any desired spices, stir in white wine to deglaze pot.

Cook for another minute or two, stirring occasionally.

Add marinara sauce.

Continue to simmer while you prepare pasta, gnocci, or other accompaniment for sauce.

Before serving, sprinkle Parmesan cheese over (optional).

Sprinkle some crushed red peppers into the sauce to add an extra spicy kick.
