Clean Out The Fridge Pasta

One of my family's favorites, this dish is quick, easy and tastes great. Perfect for the end of the week as a way to use up fresh vegetables. No real recipe - just clean out your refrigerator!

When you want a comforting, yet quick and healthy meal, try this one. I start with basic pasta - any kind, any size, cooked according to package directions. Saute leftover meat and/or vegetables with some olive oil, add some favorite seasonings*, combine the pasta and that's it!

Some of my favorite combinations:

  • Linguini, onions, spinach, garlic
  • Angel hair, mushrooms, tomatoes, garlic
  • Fettucini, cooked chicken, peas, garlic
  • Fusilli (corkscrew pasta), zucchini, tomatoes, garlic

Add the pasta to the saute pan for a few minutes so the pasta absorbs the other flavors.

*Depending on my mood, I sometimes add red pepper flakes, dried basil and oregano.

When you plate it, sprinkle on some grated peccorino romano cheese, a little salt and pepper, and a few more drops of olive oil.

Note the common denominators to these dishes: pasta, garlic, and olive oil, because I happen to love pasta, garlic, and olive oil! Mix and match and change it to the meat and vegetables you love the most. Create your own!
