1 egg
100g self raising flour
50g Kellogg's cornflakes
Cream the sugar and butter together until light and fluffy. Beat in the egg and fold in the sieved flour and instant coffee. Fold in the crushed cornflakes and mix well.
On a greased baking tray drop heaped teaspoons of the mixture. Bake in a moderately oven. 190oC - Gas mark 5 for 15 minutes. Cool on a wire rack.
NOTE: These cookies can be iced with coffee flavoured icing and decorated with half walnuts or chopped nuts.

Thank you for your time to send me that comment.
I would like to try this out..please can you tell me,for how many minutes this should be in the oven? Thanks for sharing the recipe!
Thank you for your comment and I am sorry for the oversight. The recipe says 15 minutes.
And how much instant coffee goes into the batter? Or is it "to taste?" Thanks!
Hello Peggy W and thank you for coming and asking. Yes it is to taste especially if you make it for children or if there will be also children who will have it.
This sound so good. Thanks for the recipe! With the colder weather approaching here in the south, a lot of people have baking on their minds.
Thank you for lovely comment.
I am definitely making these this weekend. Thanks
Thank you lyncsingray, let me know how you are getting on.
