Christmas is coming fast and we better get our baking books out. Here is a very quick and easily to make recipe for Coffee Cookies. Good Luck

100g unsalted butter

100g sugar

1 egg

100g self raising flour

50g Kellogg's cornflakes

Cream the sugar and butter together until light and fluffy. Beat in the egg and fold in the sieved flour and instant coffee. Fold in the crushed cornflakes and mix well.

On a greased baking tray drop heaped teaspoons of the mixture. Bake in a moderately oven. 190oC - Gas mark 5 for 15 minutes. Cool on a wire rack.

NOTE: These cookies can be iced with coffee flavoured icing and decorated with half walnuts or chopped nuts.
