Celiac Disease? What is Celiac Disease?
63 Put simply: if a person has Celiac Disease, then their
lining of the small intestine becomes injured
when they consume wheat, rye, barley, or oats.
The problem is that proteins of these grains
make your body believe you have the flu and it
destroys the part of the body where you should
absorb food.
With celiac disease, you can't take in anything
made with wheat, barley, rye, and should avoid
oats. So, you have to give up versions of the
foods you love but don't have to give them up
completely.
Some Suggested Foods
You can eat Tinkyada noodles which are made
from rice just like regular pasta noodles. You
can try many different versions such as Glutino
frozen crusts. You can eat Enviro-Kidz cereal
like Gorilla Munch or Panda Puffs. Rice Chex
are now marked gluten-free.
The big thing is to
focus on what you can eat. Fruits, vegetables,
and plain meat are all ok.
Lots of Mexican
foods - tacos, refried beans, rice, etc may be
ok. Some restaurants (ex- Outback, Chik-Fil-A)
have gluten-free menus so eating out does not
become a thing of the past - just less
convient.

It is important to get a thorough diagnosis of Celiac disease because it can be confused with other diseases such as:

- iron-deficiency anemia caused by menstrual blood loss,
- inflammatory bowel disease,
- diverticulitis,
- intestinal infections, and
- chronic fatigue syndrome.

Why are the Symptoms So Varied?

person started eating gluten-containing foods,
