Anything can make a tasty meal
It's true. Too much of what we buy from the shops goes into the ordinary waste; and that is a waste of our natural resources as well as adding to the ever growing problem of rubbish. Our parents and grandparents made the most of everything they were given, or they grew. So come on, have a go at using leftovers. It's fun, tasty and could save you a few pounds each week.
Quick and easy veg recipe
This is an old traditional British dish that was usually served as a breakfast but can be a great accompaniment to a main meal. You can use any leftover vegetables to go in this dish, ideal if you have lots left over from a roast, but it does require potates so you will have to boil some if there are not enough.
Bubble and Squeak
Ingredients:
Any leftover vegetables (carrots, swede, sweetcorn, peas, cabbage, leeks, cauliflower etc etc). If you don't feel you have enough put a little more on to boil as you would for your roast dinner.
Potates - previously roasted are best for taste but again you can supplement with a few extra boiled ones.
A little cooking oil
Salt and pepper to taste.
The recipe:
Mash the potatoes
Cut the vegetables into small pieces
Place vegetables in a bowl and add salt and pepper to taste
Mix all the vegetables together with the potates until they stick together and you can mould it into a ball.
In a frying pan heat a little cooking oil then add the vegetable mixture.
Flatten the mixture down until it resembles a thick pancake.
As the vegetables start to cook and turn brown the mixture will 'bubble and squeak' hence the name.
Turn the mixture over so that both sides are cooked - it doesn't matter if the mixture breaks apart.
When both sides are golden brown and sizzling it's ready to serve.

Sounds lovely, I'll have to give that one a try.
Sounds like potato pancakes with vegies. Yum. I use my left over vegetables just like Rodney - with eggs. But, I add some potatoes and melt cheese on top. It makes a great weekend breakfast along with English Muffins or buttered tortillas.
That's a good way to add flavour. Keep those ideas coming - I do have some other food hubs to add, when I can get five minutes from the cughs and snezes at the mo!

Bubble and Squeak sounds delicious! I think I will try it next week, you know just before the next shopping trip when all those small bits of leftovers abound!
I always try to leave my shop until a day later than the previous week (ie if I went wednesday this week it would be thursday next) and it is amazing what you can do with what is left in your fridge/cupboard.

Great hub, yes it is often the left overs that get overlooked, and wasted.
Another simple way of using the leftovers, is finely chop and fry whatever, in a large frying pan.
Fry till a light golden brown, add salt and pepper and stir together.
Mix 1 an 1/2 eggs per person in a bowl with a splash of milk, beat the mixture and pour over the leftovers in the pan. cook until the eggs start to set in the pan. and place the pan under a grill cook till eggs are set.
Then serve either with toast (left over bread from the day before makes the best toast).
Or on its own.
