Occasionally you'll see the very small and intensely sour pickles called Cornichons in fancy food stores. Packed in tarraon-flavored vinegar, the tiny, expensive pickles are imported from France. you can make mock cornichons with tiny sweet gherkins. Serve the pickles with a terrine or pate.

1 jar (about 8 oz) tiny sweet gherkins

white wine vinegar

dry tarragon

Drain and measure liquid from gherkins. Measure an equal amount of vinegar and add 1/2 teaspoon tarragon for each1 to 1 1/2 cups pickles. Discard pickle juice.
