Costa Azul - Adventure and Surf Resort in Mexico

The beach resort for people who don't like resorts
Costa Azul is a small adventure resort about an hour north of Puerto Vallarta. In the town of San Francisco (known as San Pancho for some reason), it is a great vacation spot for someone who does not want to do any planning, but wants to get in a lot of activities. There are several packages, with varying amenities and prices, but for $118 per person in the "off-season" you get all of your meals (including beer and wine), activities and room. There are only about 20 rooms in the main resort (with several additional houses for rent), a great pool with a swim-up bar, large lounging area, and giant pelapa which serves as the dining area.
Though the rooms some updating, the resort is generally well-maintained, the staff is incredibly nice, and the activities are diverse. We went horseback riding, snorkeling, kayaking, and surfing. Eduardo, one of the surf instructors, helped me stand up on one of my first waves! The food is pretty good, definitely suited to the cautious traveler, and each night features some form of entertainment. Mexican Night, every Friday, was a blast - not to be missed.
It's easy to get to Costa Azul. Fly into Puerto Vallarta, and either catch a cab straight to the resort (about $60 dollars) or a bus that passes by the airport heading towards Sayulita. From Sayulita, catch a cab to Costa Azul for about $10.
Costa Azul is a very family and surfer oriented resort that is mellow and easy.
