In the previous article we discussed how healthy cottage cheese is for you to make a part of your diet on a regular basis. Problem is that many people cannot stand the taste of this dairy product. With come creativity however, there is definitely a way out there for you to enjoy it. Browse through the following recipes, along with the recipes in the first edition of this article to find one you might enjoy.


Cottage Cheese Tuna Melt

Perfect for a weekend lunch!

1 or 2 slices of whole wheat bread

1 can tuna

½ cup cottage cheese

2 slices reduced fat cheese

Garlic and onion powder

Low fat mayonnaise

Lightly toast bread and spread with a thin layer of low fat mayonnaise. Then spread over already mixed tuna and cottage cheese. Place slices of cheese over top, sprinkle with garlic and onion powder and then place under a broiler until cheese has melted. Serve with ketchup if desired.

Cottage Cheese Lasagne

Cottage cheese can also take the place of ricotta cheese in your favourite lasagne recipe. Try substituting half the cottage cheese in the first time you make it and then if you do, use it as a complete replacement next time.

Cottage Cheese Fruit Dip

Instead of dipping your fruit in chocolate sauce or whip cream, try this healthy, high protein alternative.

1 cup cottage cheese

2 packets of sweetener

1 tsp cinnamon

½ tsp vanilla extract

Combine and put in the fridge to cool.

Fruit Dip 2

A second super easy for dipping in fruit that also has some healthy fats added in.

½ cup cottage cheese

2 tbsp peanut butter

Stir together and serve.


Cottage Cheese Pancakes

This is a great healthy alternative to the higher carbohydrate pancakes you normally make for your weekend brunch.

2-3 eggs

1 cup cottage cheese

2 packets of sweetener or 1/2 mashed banana

1 cup uncooked oatmeal

1 tsp vanilla

In a blender, blend the eggs together first. Then add in cottage cheese and banana or sweetener and blend again. Finally add uncooked oatmeal and vanilla and blend for a last time. Proceed to cook as you would with regular pancakes in a non-stick pan over medium low heat.

Cottage Cheese Nachos

Looking for a dish for the big football game? Give this a try.

1 cup fat free cottage cheese

1 pound extra lean ground beef

Tomatoes, green peppers and onions

1 cup reduce fat cheddar cheese

Salsa

Tortilla Chips

In a pan cook lean ground beef. Sprinkle beef over nachos and then add the vegetables over top. Spread cheddar cheese over the plate and place under the broiler for a few minutes. Next spoon cottage cheese and salsa in the centre for dipping.

So try out one of these recipes today. Remember that if you are finding you aren't liking cottage cheese, you may want to try a different brand or percentage of fat. Many people do not like the fat free cottage cheese at all but upon trying 1% have no problem eating it. Brands do vary quite a bit as well so make sure you look into that too if you are having trouble tolerating it.
