Country Skillet Chicken;
When it is raining or such outside,I like to cook up some country skillet chicken in the oven for dinner or even lunch.
Here are a few recipes for chicken.
4 large pieces frying chicken
1 teaspoon oil
1/2 cup chablis or your favorite white wine.
1/2 teaspoon salt
1/4 cup chicken broth
1 teaspoon lemon juice
2 teaspoons butter
1 cup fresh mushrooms
1 bay leaf
1 teaspoon prepared mustard
1 teaspoon dried parsley
5 large garlic cloves
Mince 1 garlic clove,mix with lemon juice and rub over chicken pieces.Let sit ten minutes.
Slice or half mushrooms
melt butter with oil
saute chicken for 15 minutes turning once.
add mushrooms,wine,bay leaf,salt and remaining garlic cloves.Cover and cook ten minutes.
Blend mustard with chicken broth,pour over chicken and continue cooking,covered until chicken is tender,about 15 minutes longer.
Remove chicken and garlic cloves to serving platter and keep warm.
Discard bay leaf,bring pan liquid to a boil to reduce and thicken slightly.
Pour over chicken and sprinkle with parsley.
NOTE:Serve a whole garlic clove with each serving to mash into the sauce as chicken is eaten.
Good with Rice..
Easy Chinese Chicken
I like this dish because it is easy to prepare.
1 chicken
1/2 cup onion(chopped)
1/2 cup water chestnuts,sliced
1 cup celery chopped
1 can cream of chicken soup
1 large can chinese noodles
Boil or microwave chicken and cutr into bite size pieces.
Mix all ingredients togeather.
Bake at 400* for 35 minutes..
