These are the king of quesadillas. If you like quesadillas you will just simply love crab quesadillas with mango salsa. I have cooked these at restaurants all over the United States and every one who tries them say that they are one of the best things they have ever tasted. And people all over the USA have begged me for this recipe but here I am sharing it with the world. Just follow along and you will truly have the best tasting crab quesadillas you will ever eat and the mango salsa makes these crab quesadillas just that much better if that is at all possible.
For Your Ingredients For Your Crab Meat Quesadills Your Going To Need.
1. One Pound Can Lump Crab Meat.
2. One Package Flour Tortillas.
3. One Large Green Bell Pepper Cut Into Thin Slices.
4. One Large Red Bell Pepper Cut Into Thin Slices.
5. One Medium Purple Sweet Onion Cut Into Thin Slices.
6. One Tablespoon Olive Oil.
7. Eight Ounces Mascarpone Cheese.
8. One Teaspoon Ground Cayenne Pepper.
9. 1/4 Cup Very Finely Chopped Cilantro.
10. One Cup Monterrey Jack Cheese Finely Shredded.
11. Vegetable Cooking Spray.
You will want to preheat your oven to 450 degrees. Now you will want to heat your olive oil in a skillet and add your peppers and onion and cook until done. Make sure to go through your crab meat making sur eyou don't have any shell fragments. Stir together your crab , Marscapone Cheese , cayenne pepper and cilantro.
Spray half your tortilla shells with vegetable cooking spray and lay them flat on a baking sheet. Add equal parts of the crab meat and equal parts of the peppers and onions and sprinkle with the monterrey jack cheese and then put a flour tortilla on top of each. Bake for 10-12 minutes until golden brown in color. Allow to cool a few minutes and then cut into quarters. Serve with the below mango salsa for a wonderful tasting dish.

1. 2 Cups Mango Pureed Fine In Food Processor.
2. 1 Cup Plum Tomatoes Diced Very Fine.
3. 1/4 Cup Red Bell Pepper Diced Very Fine.
4. 3 Tablespoons Lime Juice.
5. 1 Tablespoon Fresh Cilantro Diced Up Very Fine.
Mix all your salsa ingredients together very well and chill two hours or more before serving with your crab meat quesadillas.
