Cranberry Orange Quick Bread Recipe

Home made bread is one of the most comforting foods a baker or cook can prepare. Fresh, warm and soft a Cranberry orange quick bread recipe delivers home made goodness in about an hour. This recipe makes two loaves baked simultaneously and preparation time takes about 5 minutes which makes it perfect for a busier family.

 

Ingredients:

 

  • 2 cups flour

  • 1 cup frozen cranberries chopped

  • 3/4 cup sugar

  • 1/2 cup chopped walnuts

  • 2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 egg beaten

  • 1 teaspoon grated orange peel

  • 1/2 cup orange juice

  • 1/3 cup mayonnaise

Before mixing the dry ingredients, grease 2 small loaf pans and preheat the oven to 350°.

 

In a mixing bowl combine the flour, sugar, baking powder, salt, cranberries and walnuts. In a separate bowl combine the egg, orange peel, orange juice, and mayonnaise making sure it is evenly blended and of a smooth consistent texture.

 

Pour the liquid mixture slowly into the dry mix and fold. The mixture will be complete when it is just barely blended. Split the mixture between the two greased loaf pans and place in the preheated oven for 60 minutes.

 

After baking allow the bread to cool for approximately 10 minutes and serve. The cranberry orange quick bread can be made the night before for a quick and delicious breakfast during the work week. You could also prepare it on a weekend the morning, set the timer and continue preparing the rest of breakfast. The bread will be finished by the time you sit down to enjoy.
