The potato is used as a food staple all through out the world. It is used as food for humans , fed to livestock and used to create alcohol products like vodka. The potato can be traced back to its origin in the Andes of Peru.
Today most of the worlds potato crops are grown in the USA with major potato growing areas in the states of Idaho , Washington State , North Dakota , Oregon , Wisconsin and Maine.
The potato is 80 percent water and it is rich in vitamin C , and the potato skin is a great source of fiber.
Potatoes are baked , fried , boiled , made into soup and millions of pounds a year are made into french fries. Potatoes are also dried and ground into potato flour to make potato bread which is delicious and some of the best potato pancakes ever.

The Irish Potato Famine occurred in 1845-1846 and millions of people died when a blight struck the Irish peoples potato crops in 1845 and again in 1846. Millions of people fled Ireland and many of them ended up in the United States as new immigrants.

In the United States potatoes are harvested in the late summer to early fall and it is at that time that you will find the greatest variety available down at your neighborhood supermarket.
There are many varieties of potatoes and you really should try some of the available varieties like Yukon Gold which is one of the most delicious potatoes you will ever eat.
And if you've never had potato pancakes you have to try them. The next time you have left over mashed potatoes save them and turn them into potato pancakes. Once you taste potato pancakes you'll wonder why you haven't been eating them all your life.
Creamy Potato Soup With Bacon Recipe
Today I noticed that the leafs are falling and its getting cooler every night. And at that time of year I start to think about soup and any time I really get soup on my mind I start to think about potato soup which is one of my all time favorite soups.
This potato soup is rich and filling and I'll warn you up front if your looking for a light soup this isn't it. Instead its a richly delicious soup with tons of flavor. And if you love potatoes this is the soup for you. Because once you make it I think you will agree that you have one of the most delicious potato soups ever.
For Your Potato Soup You Will Need.
1. One Pound of Bacon cut up in small piecesĀ and fried crisp.Keep back 1/3 for garnish.
2. One Large Purple Sweet Onion chopped up fine.
3. Two Tablespoons Minced Fresh Garlic.
4. Five Pounds of Yukon Gold Potatoes peeled and cut into small cubes.
5. Thirty Two OuncesĀ Chicken Stock.
6. One Quart Heavy Cream.
7. One Half Pound Real Butter.
8. One Tablespoon Ground Cayenne Pepper.
9. One Teaspoon Salt.
10. One Teaspoon Black Pepper.
11. One Finely Diced Bunch Green Onions, save tops for garnish.
12. Sour Cream for garnish.
Okay you will want to cook your bacon and leave the bacon drippings in the skillet. Add your onion and the green onion bottoms to the pan but save the green onion tops for garnish. Cook your onion until tender and then rake all the onions and pan drippings into a large stock pot. Add all your ingredients to the large stock pot except the cream.
Start your stock pot on a boil and once it is boiling well reduce the heat to medium and let cook until your potatoes are tender. Now turn the heat off under the pot and let it cool down to room temperature.
Once at room temperature take your quart of heavy cream out of the refrigerator and add to your pot of potato soup and stir it in. Now you will want to puree your soup in batches in a food processor or blender. Once you have it all pureed and back in the stock pot bring it almost back to a boil and then turn down to simmer. Do not let it boil.
Serve in bowls and garnish with crumbled bacon , chopped green onion tops and sour cream. This is one of the most delicious potato soups that you will ever eat. It is wonderful with captains wafers.
