Creamy Vinaigrette Dressing

This dressing is the basis of many fine salad dressing that add life to leafy green vegetables. To vary the flavor or add a gourmet touch, use the unique flavors of walnut or almond oil blended with a little herb or raspberry vinegar.

These are all quite strong, so use sparingly and combine with olive oil or white vinegar to make the correct proportion.

Ingredients :

  • ½ cup (125 ml) white wine vinegar
  • salt and freshly ground pepper
  • 1 cup (250 ml) olive oil (or a combination of ½ olive oil and vegetable oil)

Procedure :

1. Combine all ingredients in a screw-topped jar and shake.

Makes 1 ½ cups (375 ml)
