I am a huge fan of chili and collect chili con carne recipes as a result. I came up with a great combination of flavors by experimenting with several easy chili con carne recipes. Here is a crock pot chili recipe that I believe is the best chili you will ever eat. (Or scarf down is a better description- really!)

Some Chili Trivia

Just a bit of chili trivia first, though. Chili is not an original Mexican recipe, as many believe. As a matter of fact, most areas of Mexico still don't eat chili, except where tourists gather, of course. No one knows for sure where the first bowl of chili was served, but it is thought to be of Spanish origin. The first chili recipes in the United States have been found in Texas. I don't think that comes as a surprise. :)

What is the difference between chili and chili con carne recipes? Con Carne simple means with meat. Okay, so off we go to learn how to make the best chili con carne recipe in the world.

A couple of things to note about this chili con carne recipe. First, it is a very easy chili recipe. Anyone can learn how to make chili. Second, this recipe for chili uses easily found ingredients that most people already have in their pantries. Third, it is CHEAP to make!

This crock pot chili recipe can actually be made two ways- in the slow cooker (recommended), or on the stove if you just can't wait to eat. And this piece of advice goes for all chili recipes- if you don't like an ingredient, skip it. It is really easy to learn how to make chili. However, you can't omit the basic ingredients for chili recipes- which are some sort of tomato base and chili powder or chili peppers.

And this particular chili con carne recipe has some interesting ingredients. Please try this easy chili recipe with them first before discounting them. Believe me, I was hesitant to use them as well, but they add a richness to the chili recipe that you will definitely miss if you don't use them in your chili. Diet Coke can be substituted with no altering of flavor.

Ingredients for Easy Chili Con Carne Recipe for 6-8 People

  • 1 pound ground beef or beef stew meat

    1 envelope dry onion soup mix

    1-2 tablespoons chili powder, according to preference

    2 teaspoons cumin

    2 teaspoons dry cocoa

    1 teaspoon Worcestershire sauce

    2 cloves chopped garlic

    1 cup chunky salsa

    1- 6 oz. can tomato paste

    1- 15 oz. can diced tomatoes

    1 can Coke or Diet Coke

    1-2 cans of kidney beans or black beans, according to preference (optional)

How to Make the Best Chili Recipe Ever

Brown ground beef first. Drain well and add to slow cooker. Add the rest of ingredients. Cook on low for 5-6 hours.

An alternative way to make this chili con carne recipe is to brown the ground beef and drain. Add to a large pot. Add all of the rest of the ingredients. Stir. Bring to a boil and then simmer for 30-45 minutes. Stir occasionally to avoid sticking.

Additional Crock Pot Chili Recipe Tips

This easy chili recipe is great topped with sour cream and shredded Cheddar cheese. Some people like to pour chili over rice. Chili is also good as a topping on baked potatoes.

Some suggested side dishes would be cornbread or polenta and a salad. And chili paired with a peanut butter sandwich can't be beat. Dip that peanut butter sandwich right into the chili. MMM.

Try this chili the next day for even better flavor. This chili con carne recipe freezes extremely well if you leave out the beans. The beans have a mushy texture if you thaw and reheat them.

Also, if you like your chili recipes really thick, leave out the can of diced tomatoes.

When I was stationed in California I worked at the A.F. hospital. we entered the Rosamond chili cookoff and our publicity photo had us spoon-feeding an anatomical skeleton a big ladle of our chili. We didn't win any prizes for the chili, but I learned a lot of great things about "real" chili at that event!
