Crockpot Casseroles

With the busy lifestyles of many families today, slow cooker (crockpot) meals are a great way to prepare a delicious dinner without a lot of hassle. You can just throw all the ingredients into your crockpot and turn it on. Then leave for several hours and get your errands done or enjoy time with your family, while the meal cooks itself.

Another plus for using your crockpot is that it doesn't heat up your kitchen. Also, cooking in one pot means washing only one dirty pot.

What's In A Name?

Crock-Pot™ is actually a specific brand of slow cooker, but most people use the term crockpot to refer to any brand. It's similar to how Kleenex means any facial tissue and Xerox paper refers to any type of copier paper. So whether you call it a Crock-Pot™, crockpot or slow cooker, every kitchen should have one!

If you are looking to buy a slow cooker, the official Crock-Pot™ slow cookers are actually the best on the market. They come in a variety of sizes, ranging from 16 ounces to 6.5 quarts, and last forever.

Here are some delicious chicken casserole recipes that you can make in your crockpot.


Classic Crockpot Chicken and Rice

Ingredients:

  • 6 boneless, skinless chicken breasts (cubed)
  • 1/4 cup celery (diced)
  • 1/4 cup white onions (diced)
  • 1 cup Minute rice
  • 2 cans cream of chicken soup
  • 1 can cream of mushroom soup
  • Parmesan cheese

Combine soup and rice in slow cooker.

Add celery and onions, then place cubed chicken on top of mixture.

Cook for four hours on low.

Sprinkle with parmesan cheese and serve hot.

Makes six servings.

Chicken Potato Crockpot Casserole

Ingredients:

  • 6 boneless, skinless chicken breasts (cubed)
  • 1 package (32-ounce) frozen hashbrown potatoes
  • 1 can cream of chicken soup
  • 4 ounces cream cheese
  • 1/4 cup white onions (diced)
  • 1 can (4-ounce) chopped green chiles
  • 8 ounces shredded cheddar cheese

Combine all ingredients except cheddar cheese in crockpot.

Cook for three hours on high.

Top with cheddar cheese and reduce heat to low.

Cook for 30 minutes additional minutes and serve hot.

Makes six generous servings.

Chicken Tortilla Crockpot Casserole

Ingredients:

  • 6 boneless, skinless chicken breasts (cubed)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes
  • 1 small can sliced black olives
  • 1 can (4-ounce) chopped green chiles
  • 4 cups shredded cheddar cheese
  • 1 dozen flour tortillas (cut in quarters)
  • butter or margarine

You are going to create a layered dish of chicken mixture, cheese and tortillas.

Combine all ingredients (except cheese, tortillas and butter) in a large bowl.

Start by placing a thin layer of the chicken mixture in the bottom of the crockpot.

Add a layer of shredded cheese and then follow with a layer of buttered tortillas quarters.

Repeat layering, ending with cheese.

Cook for two and a half hours on high, then reduce to low and cook for an additional 90 minutes.

Makes six servings.

Kori, When you get to the buttered tortillas, how do you go about the buttering? Should I melt the butter and toss the tortilla quarters?

This sounds good. I think I will try one of these recipes tonight!
