Here are three great walnut recipes from "Moms Recipe Box." Two of them are OK for Vegan, Vegetarian and egg allergy diets. I love to bake things at home. Not only do they taste better, use better ingredients and are not filled with preservatives but the anticipation and the wonderful smell of the cakes or cookies, quick-breads or pastries baking in the oven at least doubles the pleasure of eating them.


Crunchy Walnut Bread Recipe

Most Nut bread starts with the word and the fruit banana. Not so good if you have an allergy to bananas or you hust don't care for them. This one is banana free. It's easy. it's delicious. This wonderful walnut bread is made from biscuit mix

Ingregients:

  • 1 Egg
  • 3/4 Cups Milk
  • 1/2 Cup Sugar
  • 3 Cups Biscut Mix (Bisquick Prefered)
  • 1 Cup Chopped Diamond Walnuts

Beat one egg; stir in 3/4 cup milk, 1/2 cup sugar, 3 cups biscuit mix. Add 1 cup chopped Diamond Walnuts. Bake in greased loaf pan 1 hour at 350 degrees.

For variety, add 1 tbsp. grated orange peel, or 1/4 cup orange marmalade. From Diamond Walnuts

 

 

Brown Sugar Walnut Squares

This is a little different. You might think you were going to make brownies if there was chocolate in them. There are no eggs. Vegetarian, vegan or an egg allergy sufferer you can fit these right into your diet.

Ingredients:

  • 1 cup C & H Brown Sugar packed
  • 1 tsp vanilla
  • 1 Egg 1/2 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup coarsely chopped walnuts

Combine sugar, vanilla and egg. Stir until smooth and blended. Combine flour, soda and salt. Add to sugar mixture. Stir until blended. Add walnuts.

The original recipe says; spoon into greased and paper-lined 8-inch square pan. (Personally I just grease and flour the pan and serve them right out of the pan.) Bake at 350 degree oven 18-20 minutes (It will be soft in the center) Cool in pan. Remove from pan, peel off paper and cut into 16 squares.

Black Walnut Shortbread Cookies

These cookies are really light crispy and full of flavor. OK for Vegetarian (if not too strick) and egg allergy diets.  You could try this with butter flavor shortening if Vegan.

Ingredients:

  • 1 cup butter softened
  • 1 cup sugar 1 1/2 cups chopped black walnuts or English walnuts, toasted
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup semisweet chocolate pieces (optional)
  • 2 Tbsp shortening (optional)

In a large bowl mix butter and 3/4 cup of the sugar with a mixer on medium speed. When light and fluffy stir in 1 cup of the walnuts. Mix well. Combine flour, baking powder and salt and stir into butter mixture. Mix thoroughly to form a dough.

Roll out dough on a lightly floured surface to 1/2 inch thick. Mix remaining sugar and nuts together and sprinkle on top of the dough. Roll the dough some more until it's 1/4 inch thick. Cut out cookies with a cookie cutter or knife. Bake them at 375 degrees on ungreased baking sheet for 8-10 minutes. Cookies should be just starting to brown on the edges. Cool on wire racks.

I'm not sure where this recipe came from but it's good.
