63The Guys are Coming for Breakfast
My brothers were coming to fall some trees on my land. I had a feeling that they'd wait on breakfast and opt for home-cooking vs. fast food. I was right. I hadn't done my shopping and I had limited breakfast food in stock. As I surveyed the contents of the refrigerator and the cupboards:I had eggs, orange juice left over pork roast and some boiled potatoes for a potato salad I planned to make for lunch. I had a few slices of bread left, but no jam or jelly.
I decided to use the boiled potatoes from the previous day and make them into hash browns. I don't normally make hash browns this way, but the boiled potatoes were the only potatoes I had, so I went for it.
The Menu
We were raised on the farm and all seven of my brothers have very hearty appetites. Like my mother, I do "home cooking". It is what they expect when they come to visit. So I knew that while the hash brown dish would be a complete meal for some people, it would only be an appetizer for "my guys".
Along with the hash browns and fired eggs, I sizzled up some fried pork roast, fixed toast topped with honey, made some fruit cups, poured the orange juice and coffee and set the table. Not exactly the healthiest breakfast, but it was tasty and plentiful. I could tell, as the heads bobbed and I'd hear an intermittent "this is good, sis", the hash browns were a hit.
I was pleased. Another recipe for my coffers. With their appetites sated, my guys suited up in their logging gear and headed off for a full morning of hard labor. I cleaned the kitchen, and prepared my shopping list. I knew I'd have to get to the grocery store and start fixing lunch.
The Day-After Hash Browns Recipe
Ingredients:
- Boiled (or baked) potatoes (peel and dice)
- Olive oil (or cooking oil of your choice)
- Salt (optional)
- Pepper
- Seasoning Salt
- Parsley
- Red Pepper (optional)
- Onion (diced)
Instructions
I used left over boiled potatoes. If you dont' have any leftovers:
- Microwave or Boil potatoes (2) make two good-sized servings
- Dice potatoes
- Add oil to skillet
- Brown hash brown on one side
- Add diced onions (optional)
- Add red pepper (1/4 tsp. optional)
- Flip and brown hash browns on the other side
- Lay out on plate and garnish with tomatoes lightly sprinkled with parsley
- Top with one or two fried eggs

I am glad I experimented. I guess I got that from my Dad. He was always in the kitchen, when he had time, and mixing various meats. It's fun.

I too love trying new things in cooking. Sometimes it's a dud, but mostly I've had hits. It is fun to spoil your loved ones with good eats. Wee One has given up cooking all together and I spoil her rotten. love is that way isn't it?
This is so great, I grew up with hasbrowns and it always was a labor of love to peel the pototoes and then shred them in a shreader, but they were so yummy once they were fried up in the pan for breakfast. Thanks for the memory.

That sounds great, Die'Dre'! I can't help you with logging projects, but I'm good for some vacuuming, dusting, and laundry if it'll get me a breakfast like that!
