Delicious Easy Low Calorie Blueberry Muffins

These muffins are very quick and easy to make and if you always keep a pack of frozen blueberries then you should have all the ingredients to hand.  

We all know that blueberries are a super-food.  Dr Oz considers them to be one of his favorite super-foods - packed full of antioxidants.  And in these tasty muffins you should be able to get even the fussiest child to eat them happily.

These muffins are low in fat and sugar as they rely on the natural sweetness of the blueberry.  They are a great addition to kids lunch boxes as well as a delicious snack with coffee or tea.  If you wish to make them fiber rich then substitute the flour for wholemeal  flour.

Ingredients

1 1/3 cups flour

1/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon of bicarbonate of soda

pinch of salt

1 cup low fat yoghurt

1 egg

60ml or 4 tablespoons vegetable oil like sunflower or canola

1 cup frozen blueberries


Method

Heat your oven to 400 F or 200 C.

Grease a 12 pan muffin tray - or use paper cups if you like.

Mix your dry ingredients in a bowl.  Beat up wet ingredients separately and then add to the dry ingredients.  Mix together until just combined.  The less you mix the better your muffins will rise.  Fold in blueberries.

Spoon into muffin pan or cups and bake for 20 minutes.

My family (except for my younger daughter, but she's a picky eater!) LOVES blueberry muffins. This recipe sounds yummy. I think I will have to give it a try. Thanks for sharing it.
