Delicious and Moist Carrot Cake Recipe with Cream Cheese Frosting
When it comes to carrot cake I am very picky. I can't stand when it's too dry or chunky and can barely tolerate when It's pared with a mediocre frosting. This recipe is moist and soft. The carrot pieces blend beautifully into the cake and the spices are warmly comforting. Plus it is pared with a delicious cream cheese frosting.

Ingredients
- 2 cups Flour
- 2 cups Granulated Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 1/2 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Ground Cloves
- 1/2 teaspoon Ground Allspice
- 3 cups Finely Shredded Carrots
- 1 cup Cooking Oil
- 1 teaspoon Vanilla Extract
- 4 Eggs
- 1 batch Family's favorite cream cheese frosting, see recipe below
Tips
To get the carrots finely shredded either grate them on the small side of a cheese grater. This takes a while but the results are worth it. Grating them on the larger side produces a dryer cake with noticeable carrot strings. For a short cut you can also very coarsely chop carrots and pulse them in a food processor until they are finely chopped.
Instructions
- Preheat oven to 325'F. Grease and flour two 8 or 9 inch round cake pans. Make sure your carrot's are shredded, see tips.
- In a large bowl combine flour, sugar, baking powder, baking soda and all the spices.
- Add carrot, cooking oil, vanilla and eggs. Beat with an electric mixer on low until combined. Continue to beat on medium speed for 2 minutes.
- Distribute batter evenly between the two prepared pans and bake at 325'F for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack. Let cool completely before frosting. For my favorite cream cheese frosting see the recipe below.
Family's Favorite Cream Cheese Frosting

Ingredients
- 2 8oz packages Cream Cheese, softened
- 1/4 cup Butter, room temp
- 1 teaspoon Vanilla Extract
- 6 cups Powdered Sugar, sifted
Instructions
- In a large mixing bowl beat cream cheese, butter and vanilla with an electric mixer until light and fluffy.
- Gradually add powdered sugar. Beating after each addition.
Yup, it's really that easy!
For a chocolate cream cheese frosting substitute 1/2 cup unsweetened cocoa powder for 1/2 cup of the powdered sugar.
