Ingredients

  • 1. Olive oil - 3 tablespoon (45 ml)
  • 2. Cloves garlic, minced - 2
  • 3. Green onions, sliced diagonally - 8
  • 4. Chunk root ginger, peeled and diced - 1"
  • 5. Juice of two lemons
  • 6. Water - 2/3 cup (150 ml)
  • 7. Grated rind of 1 lemon
  • 8. 1 dried red chili pepper, ground
  • 9. Turmeric - 1 teaspoon (5 ml)
  • 10. Coconut milk - 2 cups
  • 11. Cod fillets - 1½ lbs (700 gm)

Preparation Method

  • Cook garlic and onions briefly in hot oil. Add the ginger and fry a little more. Add the lemon juice and water, lemon rind, chili pepper and turmeric. Reduce the heat and add the coconut milk. Add the fish once the mixture comes to the boil and simmer, covered for about twenty minute on low heat.Garnish with fresh coriander and raisins (if desired).
