Quick Yummy Cakes In The Microwave
There are nights when I get home from running the kids to school and sports, where I find my self overwhelmed with a scheduled and I look at the calender and remember that I'm hosting dinner for a friend of mine. So I'm short on time and energy and find my self looking at my microwave.
Elegant desserts don't come from a microwave, but I did remember always hearing that a microwave can cook just about anything. So I experiment with a few different ingredients, having my guests in amazement when they were dished up a moist soft cake that I had made in a microwave.
Incredible 15 minute Dump Cake
With three ingredients, a microwave bowl or fluted bowl, you'll have guest so impressed by your fast dessert.
- Pour cake mix into the microwave bowl. Add 3 eggs and 26oz can of pie filling of choice. Mix with spoon.
- Put dinner plate over the top of bowl or I use a small platter.
- Microwave on high for 15 minutes. If the microwave doesn't have a carousel, rotate 1/4 of a turn every 3 minutes.
- Let cool for 15 minutes and then invert onto the cake plate and serve.
- Serve with ice cream or garnish with icing.

Different Combinations
Caramel apple
1 butter pecan cake mix
1 can apple pie filling
3 eggs
serve with cinnamon, ice cream
Peach cobbler
1 yellow cake mix
1 28oz can of peaches
3 eggs
Fantastic Chocolate Cake
1 Chocolate Cake Mix
3 eggs
1 16oz sour cream
1/2 cup chocolate chips
sprinkle with powdered sugar
Pineapple Upside Down Cake
1 yellow Cake Mix
1 small can of crushed pineapple in it's own juice
3 eggs
Mix all together and set aside. In the microwavable bowl sprinkle with 1/2 cup brown sugar. Arrange a small can of pineapple rings in bottom and place a cherry inside each ring. Then poor batter over top and microwave.
There are lots of great Microwaveable bowls out there that are decorative and look great as a cover over the cake when your done. I love making this when I have a sweet tooth late at night.

It's such a life saver to keep a box of cake mix, can of pie filling and eggs on hand. You never know when you might have a sweet tooth or an unexpected guest.
