The Bitter And Sweet Truth
The more you drink, the more you will be able to appreciate the sweet flavor accompanied by the bitterness. To avoid over-bitterness of the infusion and guarantee the flavor of next brewing, remeber to take the tea leaf out of the water after sufficient time of brewing. The longer the tea steeps, the stronger the flavor. I find 2 -3 minutes of steeping to be fine. You can really notice the sweetness.Anything more and the bitterness can be a little overwhelming. Just remember, if you have let brew for more than 5 or so minutes, anything that tastes this harsh must be good for you !
