Here is a simple mushroom soup recipe that is suitable for Diabetics in particular and health consious people in general.

Ingredients:

200 grams organic mushrooms of your choice, finely sliced

100 grams organic carrots, julliened

1 small organic onion, finely sliced

100 ml low fat milk

400 ml water

salt and pepper to taste


Preparation

1. In a small skillet, saute onions until transparent

2. Add carrots and mushrooms and saute for 2 more minutes

3. Add water and milk and bring to a simmer

4. Let simmer (do not boil) for a further 3 minutes

5. Add salt and pepper to taste
