When making hot wings, make sure you dry the raw wings for best crisp. Leave them in the fridge uncovered on paper towels for a few hours, then drop them in piping hot grease, (deep fry in Crisco oil is best) let them cook about 15 minutes or until they are brown. The heat should be at 400 degrees (estimate).
Get you a large rounded pan of butter, garlic pepper, and hot wing sauce, heat it up and let them all melt together, but don't burn it!! After your wings are done, pull them out with tongs, shake off that grease and stir them into the sauce quickly!!
Once covered in your warm melted mix, pull them out, put'em on a serving platter, and wha- la!! PERFECT, and crispy!! Want even crispier wings? Put them in a large zip lock bag with some self rising flour and a touch of yellow corn meal and salt, shake em up.. let'em sit fifteen minutes, then cook as stated above. I personally like them lightly coated and fried. The crisp is amazing!!
