Easy Blueberry Mascarpone Cheesecake

This is a very easy cheesecake to make and almost impossible to go wrong with. The blueberries are a really delicious addition and full of antioxidants. Many people, including Doctor Oz, believe that we should be eating a daily serve of blueberries to stave off aging. I cannot think of a nicer way to eat my blueberries!  Other than in my Low Calorie Blueberry Muffins of course!

It is a wonderful thing to give your guests and family a delicious home made dessert or afternoon tea treat.  Although this one is naughty it is far less so than a shop bought equivalent would be and with the blueberries of course it has health benefits!

Ingredients

500g blueberries (you can use frozen)

360 g caster sugar

250 g digestive biscuits

40g melted butter

1/2 lemon, juiced and zest grated

5ml vanilla essence

1 tablespoon plain flour

250 g mascarpone 

4 eggs

150 ml sour cream or creme fraiche



Method

Preheat oven to 170 C. Grease a 25 cm spring - form cake tin and line with baking paper.

Place blueberries in a saucepan with 200g of your caster sugar and 100 ml of water. Bring to boil. Remove after 1 minute and remove the blueberries and drain thoroughly. Continue to simmer the sugar syrup (now a lovely pinky purple colour) until it is reduced by half. Remove from heat.

Make biscuit base by placing digestive biscuits and 40g of your sugar in a food processor until mixture is the texture of fine bread crumbs. Or crush up by hand in a plastic bag with a rolling pin. Add melted butter and mix. Then press biscuit into cake tin to cover the bottom and sides. Place in fridge.

Next, place remaining sugar, lemon zest, vanilla essence, flour, mascarpone, eggs, lemon juice cream in a bowl and whizz up in a food processor or with an electric beater until nicely combined.

Remove biscuit base from fridge, fill with drained blueberries and then pour cheescake mix over the top. Bake at 170 C for about 45 minutes or until just set.

Remove from oven and allow to cool completely. Pour over the blueberry sugar glaze before serving. See picture.  

Once again - this one gets the thumbs up from my family!  As you can see it is very simple and yet looks quite impressive.

Thank you everyone for your nice comments! PegCole - mascarpone is actually a kind of cheese - but it is more like a slighly cheesy cream! You should get it in the cheese section of your supermarket - usually comes in a tub. Paradise - you are doing well on your six weeks. I have cheated from time to time on mine I am afraid!
