Introducing My Mom's Butterscotch Pie

Most of you have never had the pleasure of eating at my mother's table, and I know that I am and have always been prejudiced in these matters. However, my mom has a God given gift for cooking. It is her ministry and service; we have served ministers, pastors, evangelists, church elders, homecomings, birthdays, anniversaries, and any other social events which gave my mom a chance to witness with her cooking. One of her favorite dishes was Butterscotch Pie. This hub reveals her recipe and contains links and a video to help the surfer prepare this delicious butterscotch delight. Mom says you may use it freely but all other rights she reserves. ENJOY!


Recipe for oldfashioned butterscotch pie!

(Butterscotch is a type of confectionery whose primary ingredients are brown sugar and butter. Other ingredients such as corn syrup, cream, vanilla, and salt are typically part of the recipe also.)

The recipe ofered below is quite simple, and I have included a video from YouTube which might also be of help in preparing delicious butterscotch pie!

Mama Ruby Butterscotch Pie Recipe

Recipe for one pie but works better if doubled!

What to use:

  • 3 tablespoons flour
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla
  • pinch of salt
  • 2 teaspoons Crisco
  • 3 egg yolks (Save whites to make meringue - see below))
  • 2 cups whole milk (or half & half)
  • 1/4 teaspoon cream of tarter and six teaspoons of sugar for meringue


What to do

Mix sugar, pinch of salt, egg yolks and flour
Place milk in top of double boiler and heat to near boil
Add sugar mixture
Stir and cook constantly until thick
Add Crisco and simmer under low heat for 20 minutes
Pour in 9 inch baked pie shell
Cover with meringue (See meringue instructions below)
Brown at 375 for 3 to 5 minutes


How to make meringue
# Separate the Egg Whites add cream of tartar
# Beat Whites to Soft-Peak Stage
# Slowly Add 6 tablespoons Sugar Tablespoon at a time
# Beat Until Stiff Peaks Form
