Use Your Broiler to Make Great Fajitas

 

If you're like me and live in a tiny apartment, you know that recipes calling for a grill are impossible. Why miss out on delicious food when you have a secret weapon? Your broiler can solve most your grilling problems. Broilers are often neglected, but they pretty much take the place of a grill. If you want to give it a try, here is a simple and tasty recipe for fajitas:

Ingredients

1 lb. of chicken breasts

2 packets of fajita seasoning (I prefer McCormack)

1 cup of white wine

Juice of 1 lime

1 onion

1 pepper

Sliced mushrooms

Tortillas

Toppings

Shredded cheddar cheese

Salsa

Sour Cream

Shredded lettuce

Put chicken breasts in a bowl or a freezer/storage bag. Empty the packets of fajita seasoning, the cup of white wine, and juice of one lime into the bowl or storage bag. Make sure that fajita mix and liquids are well incorporated and that the chicken is fully covered or submerged. Marinate at least a half an hour.

Prepare your peppers, onions, and mushrooms by cleaning and slicing them. Put them aside for later use.

After chicken has been marinating for 20 minutes, preheat your broiler on HIGH. Make sure that your broiler pan is heated as well. After chicken is finished marinating, take chicken breasts out of marinade and place onto broiler pan. Put remaining marinade aside for later use.

Cook chicken for about 7 minutes on each side depending on the thickness of the chicken breasts. Chicken should be slightly crispy on each side. Let chicken sit for at least 5 minutes after cooking.

While chicken is cooking, cook your peppers and onions. Heat a skillet or pan on your stove at medium heat. Add about a tablespoon of olive oil to hot pan. Add your peppers, onions, and mushrooms tossing slightly until they are cooked about halfway. Then, add about a half a cup of your remaining marinade to the pan. Let peppers, onions, and mushrooms cook until soft.

Cut chicken into slices. Heat tortillas if you like them warm. Assemble fajitas depending on your topping preferences.

Enjoy! This chicken also tastes great on salads and is a good staple to have in the refrigerator for quick and tasty meals.
