Easy Healthy Recipes: Almost Meatless Burgers

I call this easy healthy recipe almost meatless because there are eggs in it, and that equals meat to some people. These are not intended to be a substitute for real burgers because in my opinion there is no real substitute for beef, but this healthy recipe is great when you want a break and you are looking for different way to eat the same old stuff.

Here's what you'll need:

  • 1 Can of Spinach drained
  • 1 dry packet of onion soup mix
  • 2 8oz cans of mushrooms drained and chopped
  • 1 Zucchini chopped
  • 1 cup of rolled oats
  • 3 eggs lightly beaten

Mix all the ingredients in a large bowl and let it sit 5-10 minutes in the fridge so the oats can soak up some moisture and thicken the mix a bit.

Get a non-stick pan or griddle ready by rubbing a little cooking oil on the surface as you heat it up to medium heat. With a serving spoon place some of the mixture on the pan forming it into a burger sized patty. Let the patty cook 2-3 minutes then flip it and cook it for 2-3 minutes more. You should have enough for 9 large patties. Cook them all and refrigerate the extras for snacking or a quick meal.

Serve them just like burgers on bread/buns with cheese, lettuce and tomato. Mayonaise goes good, I like guacamole and a dab of salsa. Try and experiment with your own ideas. The cool thing is, there are dozens of ways to enjoy the left-over patties. Viola an easy healthy recipe, cheers!

Almost Meatless Burgers: Variation 1

This easy healthy recipe may be right up your alley if you like Italian dishes like Eggplant Parmesan; Grab a patty or two and top them with about 2 tablespoons of marinara sauce like Prego or your favorite brand.

Sprinkle mozzarella or an Italian blended cheese over the top and cook in your oven or toaster oven until the cheese is melted and slightly brown on top. You can use your microwave but the cheese won't brown so use your judgment to determine if its cooked and hot enough for you. Enjoy with spaghetti and/or garlic bread or eat as a sandwich on toasted rye. Viola another easy healthy recipe idea, cheers!
