Another quick and easy recipe with Salmon
Well, the first signs of fall are upon us at last. You've rushed around all day and it's time to answer the inevitable question of "What's For Dinner?". When the weather starts to cool down, my family just loves soups and stews. This is very similar to a seafood chowder, but no thickener is needed if you use potatoes in it. This is quick and easy and you get the added benefit of healthy salmon.
Salmon Stew
Serving Size : 4
Amount Measure Ingredient -- Preparation Method

1 Can Salmon with liquid, Skin and Bones Removed
8 Ounces Evaporated Milk
8 Ounces Milk, regular, 2% or skim - your choice
1 Onion, Chopped
4 Potatoes, Diced
2 Tbs. Butter
Salt and Pepper To Taste
1. Combine all ingredients in a sauce pan. Cover and simmer on low heat
until potatoes are done.

Cooking Tip: Serve with oyster crackers.
If you're really in a hurry, instead of chopping an onion, use onion powder instead. The potatoes are a taste preference and can be omitted. The majority of the cooking time is for the potatoes to get done, so if you omit them, this will take just a few minutes to be ready. Just be careful of the temperature. You don't want the heat any higher than low for a milk-based dish.
The ingredients are very easy to have at hand, just make sure you have a can of salmon and a can of evaporated milk in the pantry. The rest of the ingredients are ones that almost everyone keeps on hand.

Love this recipe. In a time crunch, I microwave potatoes in the skin until barely done. So much easier to peel and speeds cook time.
